Gluten free diets should include oils and fats. There are some healthy fats that people should eat. Nuts are good, and fats that do not come from animals are healthy. Fish such as tuna and salmon are oily fish as they have omega 3 fatty acids. Coconut oil, olive oil and canola oil are good to cook with.
You should have two daily servings of dairy. These are gluten free and include cheese, milk and yogurt. If you are also lactose intolerant, you can have dairy substitutes in the form of soy and almond milks. Make sure that you only consume organic and unprocessed dairies or dairy substitutes.
There are some snacks that you can have if you are on a gluten free diet. For example, the Celiac Sprue association recommends the following to snack on; potato chips, pure cornmeal chips, corn tortillas, rice wafers and popcorn.
If you have celiac disease, do not be intimidated by a gluten free diet, it can be very healthy and it is not complicated. But it is important to diagnose the problem as soon as possible, and slowly figure out ways to remove gluten from your diet.
